Makes about 3 cups

Put the carrots and daikon in a medium mixing bowl and sprinkle the salt and 2 teaspoons of the sugar over the vegetables. Massage the salt and sugar into the vegetables until they release some liquid, about 3 minutes. The carrots should brighten in color, and the daikon should become pliable. Rinse briefly under cold water, then use your hands to squeeze out any liquid. Transfer the vegetables to a narrow storage container.

Stir together the vinegar, 1/2 cup warm water, and remaining 2 cups sugar until the sugar dissolves. Pour the brine over the vegetables and let them pickle for 30 minutes at room temperature. Serve immediately or keep them in the fridge for up to 2 weeks.
