Salmon Croquettes sounds so fancy, but really, they are super easy to make!
Big chunks of salmon are combined with breadcrumbs, herbs, and seasonings and formed into patties. They can be baked or pan-fried.
Deliciously crispy on the outside and flavorful on the inside, serve as a starter or as a light meal with a salad.
What are Salmon Croquettes?
Croquettes are fried patties (or rolls) that contain breadcrumbs and meat/fish. They are usually fried until crisp on the outside (I also include directions for baking) and make for a great appetizer or a light dish served with a lemon-tossed salad.
There is little difference between salmon patties and croquettes although, I personally keep the patties more simplistic and these are somewhat similar to a crab cake.
Salmon – Opt for fresh salmon for the best results, but if you’re in a bind, canned salmon will do just fine. If making grilled salmon, add a few extra fillets, as leftovers taste amazing in these croquettes!
Breadcrumbs & Eggs –These two ingredients are essential to this recipe, as they act as the binding agents.
Panko bread crumbs are my go-to choice for this salmon croquette recipe, but regular bread crumbs or cracker crumbs work too. If using regular breadcrumbs, start with a couple tablespoons less due to their finer texture, and adjust as needed.
Flavors – Most of the remaining ingredients are added for flavor. Fresh herbs, old bay seasoning, a bit of finely diced red onion, or a dash of Worcestershire sauce are great in this recipe.

A dill pickle tartar sauce or any dill sauce is great with salmon croquettes (as is creamed peas). Or try this easy dip arrangement!

Preheat the oven to 425°F and line a baking sheet with parchment paper.
In a large bowl add all ingredients, reserving 2 tablespoons of olive oil.
In a large mixing bowl, combine flaked salmon, egg, garlic, panko bread crumbs, chives, red bell pepper, mayonnaise, parsley, Dijon mustard, lemon juice, lemon zest, 1 tablespoon of olive oil, salt, and black pepper. Gently combine the ingredients.
Using a slightly heaping ¼ cup measuring cup, scoop the mixture and form it into 9 patties. Press them together gently but firmly so they hold their shape and don’t fall apart during baking.
Place the salmon croquettes on the prepared baking sheet, and bake them in the preheated oven for 13-15 minutes or until they’re lightly browned and cooked through.
The patties won’t hold together as tight as a hamburger so be gentle when placing them into the oil.
Keep leftovers in the fridge in an airtight container for up to 3 days. Reheat on a frying pan until heated through.
